How to Read a Nut Butter Label in India
The front of a nut butter jar is marketing. The back is regulated. This guide is about reading the back โ€” and it applies to any brand, ours included. Ingredients are listed by weight, largest first This is the rule that makes the whole list readable. Under FSSAI labelling requirements, ingredients appear in descending order of weight, so position tells you something even when percentages do not. If sugar appears second in a nut butter, there is more sugar than anything except the nut. If an oil appears in the first three, the jar contains a lot of added fat. Better still is a printed percentage. Ours read 85% Kagzi walnuts (Unsweetened), 75% (Walnut Butter) and 69% (Chocolate Walnut Butter). A jar that will not tell you its nut percentage has usually decided you would rather not know. For what the category is in the first place, see what is walnut butter. Added fats: the names to recognise Nut butters separate. That is physics, not a defect โ€” the nut's oil rises. Manufacturers who do not want you to see that add a hard fat to hold it in suspension. Palm oil / palmolein โ€” cheap, solid at room temperature, common in mass-market nut butters Hydrogenated vegetable fat โ€” hardened oil, associated with trans fat depending on the process Interesterified fat โ€” the newer replacement for hydrogenation "Edible vegetable fat" โ€” a category word doing the job of a specific name None of these improve the food. If a nut butter never separates at all, something is doing that work. Sweeteners A small declared amount of sweetener is not a scandal โ€” it makes a jar more likely to actually get eaten. What matters is that it is named. Watch for refined white sugar high in the list, glucose or fructose syrup, invert sugar, and artificial sweeteners like sucralose or aspartame in "sugar-free" jars. Be specific rather than sweeping when you read claims, too. "No added sugar" is only meaningful on the jar it is printed on โ€” a brand making that claim across a whole range while selling a separate unsweetened variant is contradicting itself. Ours is precise for that reason: the Unsweetened Walnut Butter has no added sugar. Our sweetened jars carry a small declared amount, printed on the label of that jar. Emulsifiers and antioxidants Most nut butters contain one or both. The useful question is whether the maker names them. What you might see What it is Sunflower lecithin (INS 322) Emulsifier โ€” slows oil separation. Sunflower-derived, so no soy. Soy lecithin (INS 322) Same function, soy-derived. Relevant if you avoid soy. Vitamin E / tocopherols (INS 307) Antioxidant โ€” slows the oil going rancid. "Stabiliser", "antioxidant" with no name Legal in some contexts, but less useful to you. Ours use sunflower lecithin (INS 322), salt and Vitamin E (INS 307). We would rather print the INS numbers than claim the jar is "pure" and let you assume there is nothing else in it. Allergens โ€” read this even if you think you know Under FSSAI rules, major allergens including tree nuts, peanuts, milk and soy must be declared. The trap specific to this category: many walnut butters contain peanut. It adds body and helps the grind hold together. Ours do โ€” 12% in the Walnut Butter, 13% in the Unsweetened, 10% in the Chocolate Walnut Butter, declared by percentage on every pack. They are not suitable for anyone with a peanut allergy. The point generalises: you cannot infer the contents of a nut butter from its name. An almond butter may contain cashew; a walnut butter may contain peanut. Read every label individually, every time, if an allergy is involved. The rest of the panel Nutrition per 100 g and per serving. Check what the brand calls a serving โ€” a small stated serving makes every number look better. FSSAI licence number. Mandatory on packaged food in India. Ours is 11024999000061. Not printed, do not buy. Manufactured by, and country of origin. "Marketed by" is not "manufactured by". Origin claims should name a place specific enough to check โ€” a district, not "Himalayan". Best before, and packing date. In a highly unsaturated nut butter, a recent packing date matters more than a distant expiry. A thirty-second version Is the nut percentage printed, and is it above 70%? Any palm oil, hydrogenated or interesterified fat? Is the sweetener named, or absent? Are emulsifiers and antioxidants named with INS numbers? What does the allergen line actually say? Is there an FSSAI number and a specific origin? Common questions How do I read a nut butter label? Ingredients run in descending order by weight, so position matters. Check the nut percentage, look for added fats, see whether sweeteners and emulsifiers are named, read the allergen line, and confirm there is an FSSAI licence number. What does INS 322 mean on a nut butter label? INS 322 is lecithin, an emulsifier that slows oil separation. It may be sunflower-derived or soy-derived โ€” the label should say which. Ours is sunflower. What is INS 307? Tocopherols โ€” Vitamin E โ€” used as an antioxidant to slow the oil going rancid. Relevant in a nut butter because walnut oil is highly unsaturated. Does "no added sugar" mean no sugar at all? It means no sugar was added. Naturally occurring sugars in the ingredients still count. Check the nutrition panel's sugar line as well as the claim. Why do some walnut butters contain peanuts? Peanut adds body and helps the grind hold together, and it is cheaper than walnut. This is legitimate when declared by percentage, as ours is. It also means a walnut butter is not automatically peanut-free. Is palm oil in nut butter a problem? It is there to stop separation and reduce cost, not to improve the food. Separation is normal and stirs back in. A nut butter does not need palm oil.
