Walnut butter costs several times what peanut butter costs, and there is no clever answer that makes that go away. Here is where the money actually goes, so you can decide whether it is worth it rather than take our word for it. The ingredient is the cost Peanuts are one of the cheapest protein crops India grows. Walnut kernel β€” particularly Kashmiri kernel β€” trades at several times the price per kilo. Everything else in the comparison is a rounding error next to that single fact. Then yield compounds it. Walnuts are roughly 65% fat against about 50% for peanuts, but the constraint is what a kilo of shelled kernel costs to get to in the first place. A walnut is shelled by hand in Kashmir; a peanut is processed at industrial scale. Why Kashmiri walnut kernel costs what it does The harvest is once a year. Walnut trees give one crop, in autumn β€” harud in Kashmiri. There is no second run and no off-season top-up, so a year's grinding comes out of a few weeks in September and October. Anything bought outside that window has been stored by someone, and storage costs money. The harvest is done by hand, and it is genuinely dangerous. A climber goes up a tree that may be thirty metres tall carrying a long willow pole and beats the branches until the nuts come down. Then the green husk has to be removed by hand β€” it contains juglone, which stains skin black for weeks. Then hand-shelling and grading. Kagzi shells are thin, which is the point of the variety, but it means machine cracking damages more kernel. Sorting by colour and size is done by eye. What the grinding adds We stone-grind cold for 24 hours. An industrial mill does the same volume in minutes. The slow method exists because walnut oil is highly unsaturated and heat degrades both the flavour and the ALA β€” but 24 hours of machine time and electricity per batch is a real cost that a fast grinder does not carry. What we do not spend money on No palm oil β€” which would be cheaper than more walnut. No hydrogenated fat. No bulking agent. Every percentage point of walnut in the jar is a percentage point of the most expensive ingredient we could have replaced with something else, and that is essentially where the price sits. How to compare prices properly Two adjustments, and most people make neither. Price per 100 g, not price per jar. Pack sizes are not standardised, so shelf prices are not comparable. We sell 200 g, a 300 g glass jar and 480 g; the 480 g is the best value per gram, as the largest pack usually is anywhere. Then adjust for walnut content. A jar at 50% walnut and a jar at 80% walnut are different products. Divide the price per 100 g by the walnut percentage and you get something close to a true comparison.
